Gabriel Wierer knows how to preserve the essence of traditional recipes while giving them a modern twist. He creates dishes that taste familiar yet excitingly new. In other words: we remain true to our philosophy of “Tradition obliges“, which unites traditional local dishes with innovative creativity, enriched by Mediterranean and international influences.
